Easy Peasy Tzatziki

After the pita pizzas I made last week, I had a surplus of pitas that needed using up. There was only one logical solution: food processor tzatziki!

I loooove tzatziki. It’s a greek sauce that takes me back to my days of living downtown London, Ontario and frequenting Sammy’s Souvlaki.  It’s pretty basic, but the way I do it takes less than 5 minutes, if that.

Ingredients:

  • 1/2 cup greek yogurt (I use fat-free)
  • 1/4 large cucumber, washed and roughly chopped)
  • half a lemon, zest and juice
  • 1 clove garlic
  • 1 tbsp olive oil
  • few sprigs of fresh dill
  • salt & pepper

There’s only one step; chuck it all in the food processor!

That’s it! Give the stuff a taste and see if you want to add more of a particular ingredient. I like mine really dill-ey, so I usually end up adding more of that.
