Weeknight Meal Idea: Pita Pizzas
This is a quick, easy and moderately healthy meal idea inspired by my best friend, Meagan (Happy Birthday, Meagan!). It’s basically a pizza – any kind you like – on a pita base instead of a pizza base. Obviously if you’re going for healthy, leave out the mozzarella!
I made three kinds: Hawaiian, Spicy BBQ Chicken and an Italian-inspired one with Parma ham, pine nuts and rocket.
I really like making these early in the week so that I can use all of the extra chopped up bits for other meals. Theres a ham and veggie pita in the fridge all ready for tomorrow’s lunch. I am also looking forward to fresh pineapple for breakfast!
Hawaiian Pita Pizza
Ingredients
- pita bread (pitta if you’re in the UK)
- pizza / tomato sauce
- mozzarella, grated
- pineapple, diced
- ham, diced
Wrap a baking tray in tinfoil and arrange your pitas on it. Spread a few spoonfuls of the pizza sauce on your pita base, leaving a few cm around the outside.
I’m always very generous with the sauce; I love it!
Next, add your chopped ham and pineapple.
Finally, sprinkle with grated mozzarella and pop into a 200°C oven (400°F) until the mozzarella has melted, which should be about 7-10 minutes.
Out of the three, this was my favourite!
Spicy BBQ Chicken Pita Pizza
Ingredients
- pita bread
- BBQ sauce
- mozzarella, grated
- chicken breast, cooked and shredded
- red onion, chopped
- green pepper, chopped
- jalapeño pepper, chopped
Wrap a baking tray in tinfoil and arrange your pitas on it. Spread a few spoonfuls of the BBQ sauce on your pita base, leaving a few cm around the outside.
Sprinkle red onion, jalapeño and green pepper onto your pizza base(s).
Top with shredded chicken.
Sprinkle mozzarella on top, then pop into a 200°C oven (400°F) until the mozzarella has melted, which should be about 7-10 minutes.
This one was Chris’s favourite. I had a hunch it would be!
Italian Pita Pizza
Ingredients
- pita bread
- pizza / tomato sauce
- mozzarella, grated
- red onion, chopped
- pine nuts, toasted
- parma ham
- rocket
Wrap another baking tray in tinfoil and arrange your pitas on it. Spread a few spoonfuls of the pizza sauce on your pita base, leaving a few cm around the outside.
Sprinkle red onion and pine nuts on your pitas.
Add parma ham and sprinkle mozzarella on top. Cook 7-10 minutes in a 200°C oven (400°F), until the mozzarella has melted.
Top with rocket and a drizzle of olive oil (optional) and serve.
